8 oz pasta (penne, farfalle, or fusilli)

1 cup fresh strawberries, sliced

1/2 cup heavy cream or mascarpone

1 tbsp olive oil

1 tbsp balsamic glaze (optional)

Salt and pepper to taste

Fresh basil or mint for garnish

Instructions

1. Cook pasta according to package instructions. Drain and set aside.

2. In a large skillet over medium heat, add olive oil and sliced strawberries. Sauté for 2–3 minutes until softened and juicy.

3. Lower the heat. Stir in cream or mascarpone and mix until a smooth sauce forms.

4. Add the drained pasta to the skillet. Toss well to coat in the sauce. Season with salt and black pepper to taste.

5. Plate the pasta. Drizzle with balsamic glaze if desired and top with fresh basil or mint.

6. Serve immediately, warm or room temperature.

Notes

For best results, use very ripe strawberries.

Mascarpone makes the sauce rich and velvety; heavy cream keeps it lighter.

Add crumbled feta or goat cheese for a savory contrast.
