Ingredients
2/3 cup extra virgin olive oil
8 cloves garlic, minced
3 tsp parsley, chopped (reserve 1 tsp)
2 tsp oregano, chopped
1 ½ tsp rosemary, chopped
3 tsp basil, chopped
1 tsp red pepper flakes
1 tsp salt (or to taste)
1 tsp black pepper (or to taste)
1 lb spaghetti, cooked al dente
1–2 tbsp Parmesan cheese, grated
Instructions
1. Place the cooked spaghetti and all the chopped herbs (except reserved parsley) in a large heatproof bowl.
2. Heat the olive oil in a small saucepan over medium heat until shimmering, just before smoking point.
3. Carefully and slowly drizzle the hot oil over the spaghetti and herbs. The heat will sizzle and release aroma.
4. Toss thoroughly using tongs to coat the pasta evenly.
5. Season with salt and black pepper to taste.
6. Garnish with grated Parmesan and the reserved parsley.
7. Serve immediately while hot and aromatic.
Notes
Be cautious while pouring the hot oil—it sizzles on contact with herbs and can splash.
For extra flavor, warm the garlic in the oil before pouring it over the pasta.
Add cooked shrimp, grilled chicken, or sautéed mushrooms for a heartier variation.
