These Glazed Peach Crumble Bars are the quintessential summer treat. Ingredients

Shortbread Base: 1 1/4 cup all-purpose flour

Peach Layer: 3 cups chopped peaches (about 4-5 large)

Glaze: 1 cup powdered sugar

Glaze: 1/2 teaspoon vanilla extract

Glaze: 4-5 tablespoons heavy cream or milk

Instructions

Preheat oven to 350°F (175°C). Line an 8×8 inch square baking pan with parchment paper, leaving an overhang for easy removal.

In a medium bowl, whisk together the flour, powdered sugar, and salt for the base. Pour in the melted butter and stir until a dough forms.

Press the dough firmly into the bottom of the prepared pan. Bake for 15 minutes.

While the base bakes, toss the chopped peaches with granulated sugar, lemon juice, and cornstarch in a large bowl. Ensure peaches are evenly coated.

In another bowl, combine the crumble ingredients: flour, oats, brown sugar, and cinnamon. Stir in the melted butter until the mixture resembles wet sand.

Spread the peach mixture over the warm, pre-baked shortbread base.

Crumble the oat mixture over the peaches using your fingers to create small clumps.

Bake for 35-45 minutes until the topping is golden brown and the peaches are bubbling.

Remove from oven and allow to cool completely in the pan.

Whisk together the glaze ingredients until smooth. Drizzle over the cooled bars before slicing.

Notes

• Ensure the bars are completely cool before drizzling the glaze, or it will melt into the crust.

• For a cleaner slice, refrigerate the bars for 30 minutes after they have reached room temperature.

• You can use frozen peaches; just thaw and drain them well before tossing with cornstarch.

• Use large flake (old-fashioned) oats for the best texture in the crumble topping.
