Ingredients
Sweet onion (Vidalia or Walla Walla) – 1 large (15 oz)
Vegan butter – 1 tablespoon
Extra virgin olive oil – 1 tablespoon
Cajun seasoning – 1 teaspoon
Salt – 1/4 teaspoon
Garlic powder (optional) – 1/4 teaspoon
Old Bay seasoning (optional) – 1/4 teaspoon
Fresh parsley (optional garnish) – 1 tablespoon
Instructions
Preheat your oven to 375°F (190°C).
Peel the onion and trim the ends. Use a small melon baller to scoop out the top 1/3 of the center to create a well.
Place the onion on a large square of aluminum foil.
Place the vegan butter into the center well of the onion.
Mix the olive oil with Cajun seasoning and pour it over the butter and down the sides of the onion.
Wrap the foil tightly around the onion and place it in a baking dish.
Roast for 60 minutes until the onion is fork-tender and jiggles.
Optional: Open the foil and broil for 5 minutes for extra caramelization.
Serve hot, drizzled with the juices from the foil.

• If you don’t have a melon baller, a small metal measuring spoon works well.
