Ingredients
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 cup salsa
1 cup sour cream
2 cups shredded Mexican blend cheese
6 small flour tortillas
1/2 cup chopped onions (optional)
1/2 cup canned corn or black beans (optional)
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. In a skillet, cook ground beef over medium heat until browned. Drain any fat.
3. Add taco seasoning and water to the beef. Simmer for 3–5 minutes until thickened.
4. Stir in salsa, sour cream, and any optional add-ins like corn or beans. Remove from heat.
5. Layer 3 tortillas on the bottom of the baking dish, tearing to fit.
6. Spread half the meat mixture over the tortillas and top with 1 cup cheese.
7. Repeat with remaining tortillas, meat, and cheese.
8. Bake uncovered for 20–25 minutes until bubbly and golden on top.
9. Let rest 5 minutes before serving. Garnish with cilantro, green onions, or avocado if desired.
Notes
You can prepare this taco bake 1 day in advance and refrigerate—just add 5–10 minutes to the baking time.
