Instructions
- Preheat your oven to 350°F (175°C) and line a couple of baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a separate large mixing bowl, using either a stand mixer fitted with the paddle attachment or an electric hand mixer, cream together the softened unsalted butter and granulated sugar until light, fluffy, and visibly pale (about 2-3 minutes).
- Beat in the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. Scrape down the sides of the bowl as needed.
- Stir in the fresh lime zest, fresh lime juice, and vanilla extract. If desired, add a few drops of green food coloring and mix until uniformly distributed.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Cover the dough with plastic wrap and chill it in the refrigerator for at least 30 minutes, or up to 2 hours.
- Once the dough is chilled, place 1 cup of powdered sugar in a shallow bowl. Scoop out rounded tablespoons of dough and roll them into smooth, roughly 1-inch balls.
- Roll each dough ball generously in the powdered sugar, ensuring it’s completely coated.
- Place the coated dough balls about 2 inches apart on your prepared baking sheets. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are just set but still look soft.
- Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
