- 2 heads Romaine lettuce, finely chopped
- 2 cups Cherry tomatoes, halved
- 1/2 Red onion, very finely diced
- 1/2 pound Genoa salami, julienned and chopped
- 1/4 pound Prosciutto, julienned and chopped
- 6 ounces Provolone cheese, cubed
- 1/2 cup Black olives, thinly sliced
- 1/2 cup Green olives, thinly sliced
- 1/4 cup Pepperoncini, chopped
- 1/4 cup Fresh parsley, finely minced
- 1 teaspoon Dried oregano
- 1/4 cup Red wine vinegar
- 1/2 cup Extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 clove Garlic, minced
- 1 teaspoon Sugar
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions
- Wash all fresh produce thoroughly. Slice romaine hearts into fine ribbons, then chop crosswise into small pieces (about 1/4 to 1/2 inch). Halve cherry tomatoes, or quarter if large. Finely dice red onion. Julienne salami and prosciutto, then chop into tiny squares. Cube provolone cheese into small, uniform pieces. Thinly slice black and green olives, and chop pepperoncini. Finely mince fresh parsley. In a large bowl, combine all these beautifully chopped ingredients. Do not add dressing yet.
- In a separate small bowl or jar, whisk together the red wine vinegar, extra virgin olive oil, Dijon mustard, minced garlic, sugar, salt, and freshly ground black pepper. Whisk vigorously until the dressing is well combined and slightly emulsified. Taste and adjust seasonings as needed.
- Pour about half of the freshly made Red Wine Vinaigrette over the chopped salad ingredients in the large bowl. Using two large salad serving utensils, gently but thoroughly toss the salad until every piece is lightly coated. Add more dressing, a little at a time, until the salad is dressed to your liking – it should be glistening and flavorful, but not swimming in liquid. Give it one final, gentle toss for even distribution.
