A hearty and comforting Hamburger Potato Casserole made with layers of creamy mushroom sauce, ground beef, tender potatoes, and melted cheddar cheese. Easy to prepare, perfect for family dinners, and freezer-friendly.

1 lb ground beef (80/20 recommended)

1 medium onion, chopped

8 oz sliced cremini mushrooms

3 cloves garlic, minced (about 1 tbsp)

1 can (11 oz) cream of mushroom soup (Campbell’s preferred)

2 cups whole milk

1 ½ tsp salt

1 tsp black pepper

2 tbsp fresh parsley, chopped (divided)

½ tsp paprika

3 lbs red potatoes, sliced ¼ inch thick

3 cups shredded sharp cheddar cheese

Instructions

1. Preheat oven to 350°F (175°C).

2. Heat a skillet over medium-high heat. Cook ground beef and onion until beef is almost browned.

3. Add mushrooms and sauté until softened. Stir in garlic and cook for 1 minute.

4. Add cream of mushroom soup, milk, salt, pepper, paprika, and half the parsley. Stir until creamy.

5. Slice potatoes into ¼-inch rounds using a knife or mandoline.

6. Grease a 9×13-inch baking dish. Layer potatoes, ⅓ beef mixture, and 1 cup cheese. Repeat two more times.

7. Cover with foil and bake for 55 minutes or until potatoes are tender.

8. Uncover and bake 5–10 minutes more for a browned top.

9. Rest 10 minutes before serving. Garnish with remaining parsley.

Notes

Use red or Yukon Gold potatoes for best results.

Assemble ahead of time and refrigerate for up to 24 hours.

Freezer-friendly: wrap tightly in foil and freeze up to 2 months.

Try cheese swaps like Monterey Jack or mozzarella.

Variations: add bacon, green beans, or sweet potatoes.
