Ingredients
1 lb ground turkey
2 large sweet potatoes (diced)
1 tbsp olive oil
1 medium onion (diced)
2 cloves garlic (minced)
1 red bell pepper (diced)
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp thyme
Salt & pepper to taste
1 cup shredded mozzarella or cheddar
Fresh parsley or cilantro (optional, for garnish)
Instructions
1. Preheat oven to 400°F and lightly grease a 9×13-inch baking dish.
2. In a large skillet, heat olive oil and sauté onion until softened.
3. Add ground turkey and cook until browned.
4. Stir in garlic, bell pepper, diced sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for 3–5 minutes.
5. Transfer mixture to prepared baking dish, cover with foil, and bake for 25 minutes.
6. Remove foil, sprinkle cheese on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
7. Garnish with fresh parsley or cilantro before serving.
Notes
For extra flavor, try topping with sliced avocado or a dollop of Greek yogurt.
Can be made ahead and refrigerated; reheat before serving.
Swap cheddar for pepper jack for a spicier kick.
