Ingredients
- 1 box yellow cake mix
- 1 cup unsalted butter, softened (2 sticks)
- 8 ounces cream cheese, softened
- 2 large eggs
- 2.5 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, combine the yellow cake mix, one large egg, and 1/2 cup (one stick) of softened unsalted butter. Beat with an electric mixer on medium speed or a sturdy spoon until a soft, uniform dough forms. Roll the dough into 1-inch balls and arrange them about 2 inches apart on your prepared baking sheets.
- In a separate medium bowl, combine the softened cream cheese with the remaining 1/2 cup (one stick) of softened unsalted butter. Beat with an electric mixer until smooth and creamy. Gradually add 2 cups of powdered sugar, beating until fully incorporated and fluffy. Finally, beat in the remaining large egg and the pure vanilla extract until the filling is silky smooth.
- Gently create a small indentation in the center of each dough ball using your thumb or the back of a spoon. Spoon or pipe about a tablespoon of the creamy filling into the hollowed-out center of each cookie dough ball.
- Transfer the baking sheets to your preheated oven and bake for 10-14 minutes, or until the edges are lightly golden and the centers appear set but still a little wobbly. Let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Pour about 1/2 cup of powdered sugar into a shallow bowl or a sifter. Once the cookies are cooled enough to handle, gently roll each cookie in the bowl of powdered sugar until it’s fully coated on all sides. Alternatively, use a fine-mesh sieve to sprinkle a generous layer of powdered sugar over the tops of the cooled cookies.
