For the gluten free pie crust:

160 g (1⅓ cups) plain gluten free flour blend (without xanthan gum)

5 g (1 tsp) caster sugar or granulated sugar

½ tsp xanthan gum (reduce to ¼ tsp if flour blend already includes it)

¼ tsp salt

115 g (1 stick) cold unsalted butter, cubed

75 g (¼ cup + 1 tbsp) cold water

For the zucchini filling:

3 medium zucchinis (about 700 g / 1½ pounds), sliced into ⅛-inch rounds

½ tsp salt

For the cream cheese filling:

170 g (¾ cup) full-fat cream cheese, room temperature

Zest of 1 lemon

1 tbsp fresh thyme leaves

1 tsp garlic powder

Salt and pepper to taste

For assembly:

1 tbsp olive oil

1 large egg, whisked (for egg wash)

50 g (½ cup) finely grated parmesan cheese

Instructions

1. In a bowl, whisk together flour blend, sugar, xanthan gum, and salt.

2. Add cubed butter and rub into dry mix until pea- to walnut-sized clumps form.

3. Gradually add cold water, tossing until flour is hydrated and dough clumps together.

4. Gently knead into a rough ball, wrap in cling film, and chill for 30–45 minutes.

5. Roll dough into a rectangle, fold in thirds, rotate, and repeat once more. Wrap and chill for another 30–45 minutes.

6. Toss zucchini slices with salt and let sit for 30 minutes. Squeeze with towel to remove excess water.

7. Mix cream cheese, lemon zest, thyme, garlic powder, salt, and pepper until smooth.

8. Preheat oven to 400ºF (200ºC). Roll dough into 10×14-inch rectangle on parchment.

9. Spread cream cheese mixture, leaving a 1-inch border. Arrange zucchini slices on top. Fold pastry edges over.

10. Brush edges with egg wash. Drizzle zucchini with olive oil.

11. Bake 30 minutes until pastry is golden. Sprinkle parmesan over zucchini and bake another 15–20 minutes until deep golden.

12. Cool for 5–10 minutes before slicing.

Notes

For a vegan option, substitute vegan butter, dairy-free cream cheese, and omit egg wash.

Mix zucchini with yellow squash for a colorful tart.

Tart can be served warm or at room temperature.
