For the Streusel Topping:

75 g (¼ cup + 2 tbsp) light brown sugar

70 g (5 tbsp) unsalted butter, softened

½ tsp vanilla bean paste (or 1 tsp vanilla extract)

120 g (1 cup) plain gluten free flour blend (such as Doves Farm Freee)

35 g (⅓ cup) almond flour

¼ tsp xanthan gum (omit if your flour blend already has it)

¼ tsp salt

For the Vanilla Cake:

50 g (¼ cup) caster/superfine or granulated sugar

50 g (¼ cup) light brown sugar

70 g (5 tbsp) unsalted butter, softened

25 g (2 tbsp) sunflower or vegetable oil

½ tsp vanilla bean paste (or 1 tsp vanilla extract)

2 large eggs, room temperature

160 g (1⅓ cups) plain gluten free flour blend

35 g (⅓ cup) almond flour

1 tsp baking powder

¼ tsp baking soda

¼ tsp xanthan gum (omit if your flour blend already has it)

¼ tsp salt

115 g (½ cup) full-fat Greek yogurt, room temperature

For the Fruit Topping:

8 medium fresh plums, halved and pitted

Powdered sugar, for dusting (optional)

Instructions

1. Preheat oven to 350°F (180°C).

2. Line a 9-inch square baking pan with parchment paper.

3. Mix together brown sugar, butter, and vanilla for the streusel. Whisk flours, xanthan gum, and salt in a separate bowl. Combine to form clumps. Set aside.

4. Cream together sugars, butter, oil, and vanilla until pale. Add eggs one at a time. Whisk dry ingredients separately. Alternate mixing dry ingredients and yogurt into wet mix.

5. Spread batter into pan. Arrange plum halves on top, cut side up. Sprinkle streusel topping evenly.

6. Bake for 40–45 minutes, until golden and a toothpick comes out clean.

7. Cool slightly, lift from pan, dust with powdered sugar, slice, and serve.

Notes

For best results, use ripe but firm plums.

Avoid airtight containers to keep the streusel crisp.

Freeze individual slices for up to 2 months.
