Gluten Free Cheesecake Swirl Peach Bread – The Perfect Dessert Loaf

This gluten free peach bread is perfectly soft and moist, packed full of juicy peaches and generously swirled with creamy vanilla cheesecake filling. It’s super easy to make, and you’d never know it’s gluten free. Perfect for dessert, brunch, or afternoon tea.

Ingredients

For the Peach Bread:

150 g (¾ cup) caster/superfine or granulated sugar

55 g (½ stick) unsalted butter, melted and cooled until warm

25 g (2 tbsp) sunflower or vegetable oil (or other neutral oil of choice)

75 g (⅓ cup) full-fat plain or Greek-style yogurt, room temperature

2 large eggs, room temperature

½ tsp vanilla bean paste (or 1 tsp vanilla extract)

210 g (1¾ cups) gluten free flour blend (without xanthan gum)

1 tsp baking powder

½ tsp baking soda

½ tsp xanthan gum (omit if your flour blend contains it)

¼ tsp salt

2 medium peaches, pitted and chopped into ½-inch pieces

For the Cheesecake Filling:

225 g (1 cup) cream cheese, room temperature

50 g (¼ cup) sugar

1 large egg, room temperature

½ tsp vanilla bean paste (or 1 tsp vanilla extract)

Instructions

1. Preheat the oven to 350ºF (180ºC). Line a 9×5-inch (23×13 cm) loaf pan with parchment paper.

2. In a large bowl, whisk together sugar, melted butter, oil, yogurt, eggs, and vanilla.

3. In another bowl, combine gluten free flour blend, baking powder, baking soda, xanthan gum, and salt.

4. Fold dry ingredients and peach chunks into the wet mixture. Stir until a thick batter forms.

5. In a medium bowl, mix cream cheese, sugar, egg, and vanilla until smooth (avoid whisking in too much air).

6. Spread ⅓ of the batter into the prepared pan.

7. Add ½ of the cheesecake filling in an even layer.

8. Top with another ⅓ of the batter.

9. Add the remaining cheesecake filling.

10. Finish with the last ⅓ of the batter, smoothing the top.

11. Optionally, place thin strips of cold butter along the center to control cracking during baking.

12. Bake for 65–75 minutes, until golden brown and set. A toothpick should come out with no cake batter (cheesecake may cling slightly).

13. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

Storage: Keeps in the fridge in a sealed container for 3–4 days.

Best served chilled or at room temperature.

Freezes well for up to 2 months.
