Ingredients
125g sugar
Zest of 1 lemon
140g unsalted butter
1 tsp vanilla bean paste
240g gluten free flour blend
65g almond flour
1/2 tsp xanthan gum
1/4 tsp salt
450g full-fat cream cheese
60g Greek yogurt
100g sugar
10g cornstarch
2 eggs
1 tsp vanilla bean paste
350g fresh blueberries
Instructions
1. Preheat oven to 350ºF (180ºC) and line a baking pan.
2. Prepare shortbread crust by mixing butter, sugar, lemon zest, flour blend, almond flour, xanthan gum, and salt. Press into pan and bake.
3. Mix cheesecake filling with cream cheese, yogurt, sugar, cornstarch, eggs, and vanilla.
4. Pour filling over crust, top with blueberries, and crumble remaining dough on top.
5. Bake until golden, cool completely, then chill for 2 hours before slicing.
Notes
For best results, chill bars for at least 2 hours before slicing.
Frozen blueberries can be used if fresh are unavailable.
Store bars in an airtight container in the fridge for up to 4 days.
Bars can be frozen up to 2 months; thaw overnight in the fridge.
