Ingredients
Filling:
8 fresh peaches, peeled and sliced
1/4 cup white sugar
1/4 cup brown sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
1 tsp lemon juice
2 tsp cornstarch
Topping:
1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
6 tbsp butter, chilled and cubed
1/4 cup boiling water
Cinnamon Sugar Sprinkle:
3 tbsp sugar
1 tsp cinnamon
Instructions
1. Preheat oven to 425°F (220°C).
2. In a baking dish, toss sliced peaches with white and brown sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Bake for 10 minutes.
3. Meanwhile, in a bowl, mix flour, white and brown sugars, baking powder, and salt. Cut in butter until crumbly.
4. Add boiling water and stir just until combined.
5. Drop spoonfuls of the topping over the hot peaches.
6. Mix 3 tbsp sugar and 1 tsp cinnamon and sprinkle evenly on top.
7. Return to oven and bake for 30 minutes until golden brown.
8. Let cool slightly. Serve warm with whipped cream or ice cream.
Notes
You can use frozen or canned peaches if fresh are out of season—just reduce the sugar slightly.
Make it gluten-free by using a 1:1 gluten-free flour blend.
This cobbler tastes best warm from the oven but also delicious chilled.
