Ingredients
- 100 grams of unsalted butter
- 120 grams of all-purpose flour
- 100 grams of granulated sugar
- 3 large eggs
- 1 teaspoon of pure vanilla extract

Instructions
- Melt 100 grams of unsalted butter in a small saucepan over medium heat. Stir occasionally until the milk solids turn golden brown and a nutty aroma fills the kitchen (browned butter or “beurre noisette”). Immediately remove from heat and pour into a heatproof bowl to cool slightly.
- In a medium bowl, whisk together 120 grams of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
- In a separate, larger bowl, crack in 3 large eggs and add 100 grams of granulated sugar. Using an electric mixer, beat on high speed for 5-7 minutes until the mixture is pale, thick, almost tripled in volume, and forms a ribbon when the whisk is lifted.
- Gently fold in 1 teaspoon of pure vanilla extract and 1 teaspoon of fresh lemon zest into the egg mixture. Gradually add the dry ingredients to the egg mixture in two additions, folding carefully with a spatula until just combined; do not overmix.
- Gently fold in the slightly cooled browned butter until no streaks remain. The batter should look glossy and fairly thick. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
- When ready to bake, preheat your oven to 400°F (200°C) and liberally butter and flour your Madeleine pan. Spoon about 1-1.5 tablespoons of chilled batter into the center of each mold. Bake for 8-12 minutes, or until the edges are golden brown and the humps are gloriously puffed. Immediately invert the pan onto a wire rack to release the Madeleines and allow them to cool.
- Once your Madeleines have cooled slightly or are ready to serve, take a fine-mesh sieve and scoop about 1/4 to 1/2 cup of powdered sugar into it. Gently tap the sieve over the Madeleines, allowing a delicate shower of white sugar to fall evenly over their surfaces.
