  • Total Time: 2 hours 20 minutes
  • Yield: 8 servings

Ingredients

Scale
  • 16 ounces of whipped topping
  • 20 ounces of pineapple chunks, well-drained
  • 15 ounces of mandarin oranges, well-drained
  • 10 ounces of mini marshmallows
  • 3.4 ounces of instant vanilla pudding mix
  • 1 cup of sweetened shredded coconut
  • 4 drops of yellow food coloring
  • 4 drops of pink food coloring
  • 4 drops of green food coloring
  • 4 drops of blue food coloring
  • 12 assorted Peeps chicks
  • 12 assorted Peeps bunnies
  • 1/4 cup of Easter sprinkles
  • 8 sprigs of fresh mint leaves

Instructions

  • Drain your canned pineapple chunks and mandarin oranges exceptionally well. Use a colander and let them sit for a good 10-15 minutes, even pressing them gently to extract any excess liquid. This is crucial for preventing a watery fluff, so don’t rush this step!
  • In a large bowl, gently unfold the whipped topping. You want it light and airy, so handle it with care.
  • Sprinkle in the instant vanilla pudding mix directly over the whipped topping. Gently fold these two together using a rubber spatula, just until the pudding mix is incorporated and there are no dry streaks. Don’t overmix, as we want to maintain that lovely fluffiness. The mixture should be thick, creamy, and hold soft peaks.
  • Evenly distribute your mini marshmallows and the very well-drained pineapple and mandarin oranges into the whipped topping mixture and gently fold them in. Be patient and fold from the bottom up, turning the bowl as you go, ensuring everything is evenly coated without crushing the fruit or deflating the whipped topping too much.
  • Divide the mixture into four separate bowls. In each bowl, add a few drops of food coloring – one with yellow, one with pink, one with green, and one with blue. Gently fold each color in until you achieve lovely pastel shades.
  • Spoon alternating colors into a large glass trifle bowl or individual serving dishes, creating a beautiful, layered rainbow effect. The layers should be soft and billowy, not compacted.
  • Chill the fluff for at least 2 hours, or preferably overnight, to allow the flavors to meld and the pudding to fully set, creating a stable, scoopable dessert. This chilling time is non-negotiable for the best texture and taste!
  • Once your heavenly Easter Fluff has thoroughly chilled and set, carefully unwrap your beloved assorted Peeps chicks and bunnies. Arrange them artfully around the top edge of your trifle bowl or individual servings.
  • Sprinkle a generous amount of festive Easter sprinkles over the entire surface of the fluff, filling in the gaps between the Peeps.
  • Finally, for a fresh, vibrant pop of color and a delicate aromatic touch, tuck a few fresh mint leaves strategically amongst the Peeps and sprinkles.
