For the Yogurt Dressing:

¾ cup (150 g) Greek yogurt or plain full-fat yogurt

1½ tablespoons extra virgin olive oil

1½ tablespoons lemon juice (freshly squeezed)

¼ teaspoon grated garlic

½ teaspoon fine salt

⅕ teaspoon ground black pepper

For the Salad:

lb (670 g) cucumbers, sliced (about 2 long English cucumbers)

½ red onion, finely sliced

¼ cup fresh dill, chopped

Instructions

1. In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, grated garlic, salt, and pepper until smooth.

2. Slice cucumbers in half lengthwise, then cut into thin slices.

3. Finely slice the red onion and chop the dill.

4. In a large salad bowl, combine cucumbers, red onion, and dill.

5. Pour dressing over salad and toss gently until evenly coated.

6. Serve immediately or refrigerate until ready to serve.

Notes

For extra crunch, salt cucumbers and let sit 15 minutes before rinsing and patting dry.

Can substitute half the yogurt with sour cream for richer flavor.

Store leftovers in fridge up to 2 days; stir before serving.
