3 pounds chicken thighs (about 6–8 pieces)
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons Italian seasoning
1 teaspoon black pepper
1 teaspoon paprika
Instructions
1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil.
2. Pat chicken thighs dry with paper towels for maximum crispiness.
3. Arrange chicken thighs skin-side up on the baking sheet. Drizzle with olive oil and rub to coat.
4. Mix salt, garlic powder, onion powder, Italian seasoning, black pepper, and paprika in a small bowl.
5. Sprinkle spice mix evenly over both sides of the chicken.
6. Bake for 35–45 minutes until the internal temperature reaches 165°F (74°C).
7. Let rest 5 minutes before serving.
