Creamy Orzo Pasta with Roasted Butternut Squash and Spinach

This creamy orzo pasta is packed with roasted butternut squash, spinach, garlic, and fresh thyme. Ready in just 30 minutes, it’s the perfect weeknight comfort food for Fall or Winter. Serve as a cozy vegetarian main course or as a side with chicken, beef, or seafood.

Ingredients

For Roasted Butternut Squash:

12 oz butternut squash, peeled, seeded, cubed

1 tbsp olive oil

Salt & pepper, to taste

2 tbsp fresh thyme leaves

For Orzo Pasta:

1.5 cups orzo, uncooked

5 cloves garlic, minced

¼ tsp smoked paprika

1 tbsp olive oil

2.5 cups chicken stock (or vegetable stock)

½ tsp salt

½ tsp Italian seasoning

5 oz fresh spinach

½ cup heavy cream

Salt & pepper, to taste

Fresh thyme, for garnish

Instructions

1. Preheat oven to 400°F. Toss squash with olive oil, salt, pepper, thyme. Roast 20–30 mins until caramelized. Set aside.

2. Toast orzo with garlic, smoked paprika, and olive oil in skillet for 3 minutes.

3. Add chicken stock, salt, Italian seasoning. Cook 8–10 mins, stirring until tender and liquid mostly absorbed.

4. Stir in spinach until wilted. Add heavy cream, mix, season with salt & pepper.

5. Fold in roasted butternut squash. Garnish with fresh thyme and serve.
