Ingredients
1 Costco apple pie (or any bakery fruit pie, about 8 inches)
1 cup all-purpose flour
½ cup brown sugar
½ cup granulated sugar
½ teaspoon cinnamon
Pinch of salt
½ cup (1 stick) cold unsalted butter, cubed
Optional: 2–3 teaspoons lemon juice (to brighten the filling)
Serving idea: Vanilla ice cream or whipped cream
Instructions
1. Preheat oven to 375°F (190°C). Transfer the pie into a large mixing bowl and break it into chunks using a spoon or spatula. Spread evenly into a greased 8×8-inch baking dish.
2. In another bowl, combine flour, brown sugar, granulated sugar, cinnamon, and salt. Cut in cold butter with a pastry cutter or fingers until large crumbs form. Sprinkle evenly over the pie filling.
3. Bake 20 minutes, or until topping is golden and filling bubbles. Cool 10 minutes before serving. Top with vanilla ice cream or caramel sauce if desired.
Notes
Tips for Success:
– Choose the right pie: Costco’s apple-berry pie works beautifully, but any fruit pie is fine.
– Balance sweetness: Add lemon juice or extra salt for brightness.
– Get creative: Top with whipped cream, crème anglaise, or fresh mint.
– Pick your pan: Use a deeper dish for thick crumble or a wider one for crispier texture.
Storage:
– Refrigerate leftovers up to 3 days.
– Freeze portions up to 2 months. Reheat at 350°F for best texture.
Pairings:
– Great with coffee, spiced chai latte, or dessert wine.
– Try alongside banana bread latte or fresh berries for extra brightness.
