Instructions

  • Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper. In a large, heatproof bowl, combine the shredded coconut, granulated sugar, egg whites, vanilla extract, almond extract (if using), and a pinch of salt. Whisk these ingredients together until thoroughly combined.
  • Place the bowl over a saucepan of simmering water (creating a double boiler) without letting the bowl touch the water. Stir the mixture constantly for about 5-7 minutes, until the mixture is hot to the touch and slightly sticky, and the sugar has fully dissolved. Remove the bowl from the heat and stir in the melted butter, if you’re using it for added richness. The mixture should be thick, glossy, and able to hold its shape.
  • Using a small cookie scoop (about 1.5 tablespoons) or two spoons, drop rounded mounds of the coconut mixture onto the prepared baking sheet, leaving about 1 inch of space between each one. You can gently shape them into more uniform domes with wet fingertips if desired. Bake for 18-22 minutes, or until the macaroons are a beautiful golden brown around the edges and lightly golden on top. Allow them to cool completely on the baking sheet for at least 15-20 minutes before attempting to move them.
  • Finely chop your dark chocolate. Place the chopped chocolate in a small, heatproof bowl.
