Ingredients
For the Dough:
2 ¼ cups (270g) all-purpose flour
2 tsp pumpkin spice or chai spice blend
½ tsp baking soda
½ tsp salt
1 cup (226g) European style unsalted butter, browned and cooled but still liquid
1 cup (200g) light brown sugar
⅓ cup (79ml) pure maple syrup
1 large egg yolk, room temperature
½ cup (125g) canned pumpkin puree, blotted to remove excess water
2 tsp (10ml) vanilla extract
½ tsp (2.5ml) maple extract (optional)
For the Spiced Sugar Coating:
½ cup (100g) granulated sugar
½ tsp pumpkin spice or chai spice blend

Instructions
1. In a heavy-bottom saucepan over medium heat, melt the butter. Whisk until brown bits form and it smells nutty. Remove from heat, cool 30 minutes until liquid but not hot.
2. Place pumpkin puree on paper towels to absorb excess moisture, then gently squeeze dry.
3. Whisk together flour, pumpkin spice, baking soda, and salt.
4. In a large bowl, stir cooled brown butter, brown sugar, and maple syrup until smooth. Add egg yolk, blotted pumpkin, vanilla, and optional maple extract. Stir until combined.
5. Fold dry ingredients into wet until just combined. Avoid overmixing.
6. Cover and refrigerate dough for at least 8 hours or overnight.
7. Mix granulated sugar and pumpkin spice for coating.
8. Preheat oven to 350°F (177°C). Line baking sheets. Scoop dough into balls, roll in spiced sugar, and place 2–3 inches apart.
9. Bake 12–14 minutes, tapping pan at 9–10 minutes if cookies puff too much.
10. Cool on the sheet for 3–5 minutes before transferring to a wire rack.
Notes
For stronger maple flavor, use both maple syrup and maple extract.
Add chopped pecans, white chocolate chips, or a maple glaze for variations.
Store in an airtight container for 3–4 days or freeze dough balls for up to 3 months.
Pair with chai latte or hot apple cider for a cozy fall snack.
