  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • For Salted Caramel Drizzle:
  • 1/2 cup heavy cream
  • 1 cup (200 grams) granulated sugar
  • 1/4 cup (80 grams) light corn syrup
  • 1/2 cup (113 grams) unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt flakes, plus more for sprinkling

Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides. Lightly grease the parchment paper.
  • In a large mixing bowl, combine the yellow cake mix, all-purpose flour, salt, baking soda, and cream of tartar. Whisk these dry ingredients together thoroughly.
  • In a separate, medium-sized bowl, cream together the softened unsalted butter with the granulated sugar and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Fold in both the semi-sweet and milk chocolate chips.
  • Press the dough evenly into your prepared 9×13-inch pan. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  • Remove from the oven and allow the bars to cool completely in the pan on a wire rack.
  • Combine 1 cup granulated sugar, light corn syrup, and 1/4 cup water in a medium saucepan over medium heat. Stir until sugar dissolves, then boil without stirring until it reaches a rich amber color (approx. 350°F/175°C).
  • Immediately remove from heat and carefully whisk in the heavy cream. Once smooth, stir in the butter until fully melted, followed by the vanilla extract and 1/4 teaspoon sea salt flakes.
  • Let the caramel cool slightly in the saucepan; it will thicken as it cools.
  • Once the cookie bars are cooled completely, generously drizzle the salted caramel back and forth over the entire surface. Sprinkle with extra sea salt flakes while the caramel is still wet, if desired.
