  • 1 1/2 cups Cadbury Mini Eggs, chopped or whole
  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
  • Beat in the large eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Gently fold in the Cadbury Mini Eggs. You can chop some for varying textures or leave them whole.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. For presentation, press a few extra Mini Egg halves onto the top of each dough ball.
