Ingredients
2 teaspoons extra-virgin olive oil
8 ounces patty pan squash, cut into 1-inch pieces
1/4 teaspoon sea salt
Fresh ground black pepper
1 tablespoon fresh lemon juice
1 garlic clove, grated
2 tablespoons chopped fresh parsley
Fresh basil leaves
Pinch red pepper flakes (optional)
Instructions
1. Heat oil in a large skillet over medium heat.
2. Add squash, salt, and pepper. Sauté for 7–10 minutes, stirring occasionally until tender and golden.
3. Turn off the heat. Stir in lemon juice, garlic, and chopped parsley.
4. Garnish with basil and a pinch of red pepper flakes, if using. Serve warm.
Notes
Use smaller squash for the best flavor and texture.
Adjust lemon juice and herbs to taste.
Pairs well with grilled proteins or pasta.
