Ingredients
1 heirloom tomato
Flaky salt
1 tsp basil pesto
1/4 cup cottage cheese or ricotta
Hot pepper oil
2 slices prosciutto or coppa
1 slice fior di latte (or fresh mozzarella)
1 tsp crushed pistachios or walnuts
Hot honey
1/2 cup baked feta egg salad
Instructions
1. Slice the heirloom tomato into thick rounds and arrange on a plate or board. Sprinkle with flaky salt.
2. Top each tomato slice with a unique combination of toppings (see notes for 3 variations).
3. Garnish with herbs or microgreens and serve immediately.
