**Crust:**

1 1/2 cups graham cracker crumbs

1/4 cup brown sugar

6 tbsp unsalted butter, melted

**Apple Crumble Topping:**

2 cups chopped apples

3/4 cup all-purpose flour

1/3 cup brown sugar

1 tsp cinnamon

4.5 tbsp unsalted butter, cold

**Cheesecake Filling:**

907 grams (2 lbs) cream cheese, softened

1 cup brown sugar

1/4 cup granulated sugar

1/2 cup sour cream

1/3 cup applesauce

3 large eggs

1 large egg yolk

1 tbsp vanilla extract

1/2 tsp salt

1/2 tsp cinnamon

Instructions

1. Preheat oven to 325ºF. Wrap the outside of a 9-inch springform pan with foil and grease the inside.

2. Combine graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes. Set aside to cool.

3. In a bowl, toss chopped apples with flour, brown sugar, cinnamon, and cold butter to make the crumble topping. Chill in fridge.

4. In a large bowl, beat cream cheese until smooth. Add brown sugar and granulated sugar; mix until creamy.

5. Add sour cream, applesauce, vanilla, salt, and cinnamon. Beat in eggs one at a time, followed by the yolk, mixing gently.

6. Pour half the cheesecake batter into the crust. Sprinkle with half the crumble mixture. Repeat with remaining batter and crumble on top.

7. Place springform in a water bath and bake for 60–75 minutes, until edges are set and center is slightly jiggly.

8. Turn off oven and cool inside for 1 hour. Remove from oven and chill at least 6 hours or overnight before serving.

Notes

Use tart apples like Granny Smith for balance.

Wrap pan tightly to prevent water from leaking in the water bath.

For clean slices, use a hot knife and wipe between cuts.
